Been trying to mount them up, but I don't seem to have the strength, or enough hands to get it to all fit together to the point that I can screw the halves shut. Does anybody have any tips? Or is it just not possible?

Hold the tire up to a light, try to line the 4 holes (10T), or 3 for the CE's as best as you can. Start a screw in one hole, and if you need to line up the rest, try a small Allen key to carefully align the rest. Just make sure both hubs are seated and engaged properly.

What length screw is supposed to be used? I can't even get it shut close enough to get one threaded.
I used a longer screw to start it off and cinch it down, then replaced it with the normal size screws. But this is the problem I keep running into now:

More and more I'm wondering why I don't just use single piece wheels...

4-40x5/8 is the correct screw, but that tire might need a 1 piece rim, with glue.

The bead has more meat then the old school tires. And even if you did get them right they are very soft and will squirm out under load.
You really do need more modern wheels for a tire like that.
