i'm spending my superbowl at home this year with just the family, but that doesn't mean i can't eat myself into a self hating coma!

i only have two things planned so far:

"antipasta casarole"

2 cans pilsbury cresent rolls
ham
pepperoni
salami
roastbeef
yellow american cheese
mozzarella
roasted red peppers

in a 9x13 baking dish layer all items starting with dough, dough in the middle and dough on the top.

bake this badboy @ 350 until top layer or dough is golden and crispy.

amazing.

second are just wings, raw uncooked.

marinate in goya "mojo" for 24 hours.
bake @ 400 for 40 minutes (or until crispy) then baste with my new sauce:

1 cup sweet baby rays hickory smoked sauce
1/2 - 3/4 cup grape jelly
1/4 cup shoyu (soy sauce will do)
2 tbl spoons wosctershire sauce
1/4 cup or more siracha hot sauce

baste for final 15 minutes.

badassery!

what's on your menu?

Sounds good Kaiser! My friends and I usually have a big Super Bowl party with tons of food and friends, but unfortunately this year quite a few of my friends are having personal issues so I'm just staying home too. The party spirit will still be in the air though, along with plenty of food. I'm sure some people will stop by so I'll make plenty. I'm going with the Super Bowl party staples:

BBQ Weenies
Sausage/Cheese Dip w/ Tortilla Chips
Wings

Anymore I do my wings in the oven also. I use to fry them, but it's kind of a PITA. I use a seasoned salt and bake them at 350 for about 30 min and then 400 for 10-15 more. I like mine just a bit on the dry side. All the fat in the skin pretty much fries the wing and drains off. After they cool I sauce them (with whatever I'm into at the time) and go at 400 again for about 15 min to thicken up the sauce. It works really well because you can cook them the night before and then just sauce and reheat them whenever you want a few at a time. I wrote it all down somewhere at home, but it's something like that.

Here is a stock photo of some. Sadly that Scooby-Doo plate is no longer with us. My wife gave it to Goodwill. I asked her why she would do such a thing and she said it was because our daughter had grown out of it. I told her that I hadn't! It's hard for me to even look at it. It was my favorite snacking plate.

My wing baking procedure is similar and I like my wings without the slimy skin too. I bake mine at 400 degrees for 45 minutes. After every 15 minutes, I take them out and baste them with the juices of however flavor I'm cooking them. After 45 minutes, I'll flip & baste one last time and set the oven to broil/grill for 4 or 5 minutes to give them a final crisping. I do a flavorful hot wings recipe and also smoky teriyaki flavor, the same cooking procedure. I'm still experimenting with a good salt & pepper wings recipe but haven't found one to call my own, yet.

It took me a few batches to get my exact time and temps down. It's hell eating all those experimental wings, but it's for the sake of science damnit!

Here's an idea if anyone is stumped and has dangerously low cholesterol. Bacon wrapped hot dogs. Just wrap in bacon and bake at 400 until the bacon is to your liking. Next time I do this I'll get Nathan's Beef hotdogs. They're delicious. These weren't really planned and I was just getting rid of some cheap hotdogs I give the neighborhood kids when we use the firepit. Then you can step it up to "The Heartbreaker". A bacon wrapped dog covered in cheese and topped with Jalapenos and bacon.

Cream cheese works great for those too. My neighbor had some great Jalapenos the past 2 years. I'm very lucky. All my neighbors have gardens and are all very generous and let me have free run of them. The past 2 years though his have been exceptional. His is huge too. His tomatoes this past summer were the best I've ever had.
