New Brushed ESC for old stadium truck..?

Searching new brushed ESC's for my old 1/10 scale FXT. Currently the truck has the stock 28 yr old Tamiya 540 brushed motor it came with when new. Two other brand new brushed motors I have to try out with it are; Reedy Radon 2 15T 3-slot 4100KV brushed 540 motor (p/n 27425) and a Dynamite 15T 540 brushed motor (p/n DYN1172). I'll be using a 2S Lipo battery when running the truck.
As far as the ESC goes, I don't know what amp rating I'll need or to not go below? I know too low of an amp rating is no good, is too high of an amp rating not a good thing also? In your opinion, are there certain brand name ESC's that you suggest staying away from and/or that are highly recommended? I'm the type of guy who would rather have something that's "more than enough" rather than something that's "just good enough or it'll do", if you know what I mean. This is literally my first rodeo sorting out modern R/C electronics, so please bare with my ignorance. I'm open to all options.

Dynamite 60A brushed ESC, 60A/360A, 2-3S lipo, (p/n DYNS2210)
Arrma Mega 12T brushed ESC, 35A, 2S lipo (p/n ARA390068)
