Pork spare ribs, I have the butcher split the up the center so I can dream they are baby backs, LOL...but for 1/2 price, spare ribs it is for me!! The chuck roast is by far the star of the show...just stupid silly awesome. I didnt take plate pics....wasnt on the plate long enough

Joey, that roast must have been so sweet. How did it turn out?
It is close to 8 pm here and we are going to do some strip loins on the grill, it rained like MF for an hour. No hail tonight, but the last month has been wet and hail like nuts.
Need to get the grill up to temp and do some corn on the cob with a home style caesar style salad.

The roast was awesome. I saved a touch off so I can have some leftovers today. Going to bake a few potatoes & stuff them with the roast & cover with cheese.
Ya know, something light...maybe I'll be nice and add a side salad.

Once again went with the homemade 1/3 pound Jalapeno Queso Burger last night. When you have the entire food pyramid on one plate, who needs sides??

Poured rain here today like it has almost all summer, but it's always grillin' weather under the roof of the top deck. More people showed up July 4th than expected so I only had a few ribs to ensure that everyone got their fill. Not today though! Did enough for my nieces, but saved half a slab of baby backs for myself. Used my own original rub plus some dried Chipotle on mine. Here they are after 3 hrs of smoke before wrapping for a couple more hours.
Here's my own personal rack. No sides, low carb. Just fell apart.
