Grill Marinade

Well, as grilling season is well underway (actually it never stops for me), I wanted to know if anyone has a good homemade marinade recipe for steak or chicken. Yes, I know how to open the bottle you buy at the store. I'm talking about something from scratch. Here's a London Broil recipe I've used:
3/4 cup salad or vegetable oil
2 Tbsp. white vinegar
1 Tsp. salt
1/8 Tsp. pepper
1 clove garlic, minced (garlic powder will work, too)
2 Tsp. copped parsley (parsley flakes work,too)
Marinate for 3hrs in fridge.(or longer)

Traditional central New York Speedie marinade-

1 1/2 cups red wine vinegar
3/4 cup olive oil
2 tbsp kosher salt
2 tbsp coarse black pepper
3 tbsp oregano
4 tbsp itialian seasoning
2 cloves fresh minced garlic

Normally you would take a nice sirloin fillet and cube it, others use chuck- marinade in fridge a minimum of 1 day, 3 is perfect. Skewer and grill for about 3 min per side,



One of my favorite chicken ones ( the other tastes too salty on chicken ) is 2 bottles of Newmans Family recipe itialian combined with 1 jar of whole grain dijon mustard. Great balance of bite and tang, and only takes about 1 hour to marinade and carmalizes nicely when on the grill.

Well I don't have an exact marinade recipe, just start to put things together and see how it turns out. However, last year we picked up a bottle of grappa to try out and decided it was not for us. We were going to toss it but it ended up in a marinade with Carribean jerk and was awesome so now we put it in all of our steak marinades.
