Many racers carried a spare kit so they had a spare everything. Afterwards they would order what they used and replace it.

$60 for a chassis set is a great deal, I remember when nose plates were selling for more than that

I'm thinking I'd like to add this kit to the collection after having built the GT. When it comes to period-correct(ish) brushed motors, what did the trucks typically run? Fairly equivalent turns to the typical buggies of the day?

It depended on what you were doing. "Stock" racing was 27 turn... 24 degrees for ROAR/38 degrees for NORRCA. National level racing was in the 13-14 turn range. Tracks around my neck of the woods had a 14 turn limit for mod, however, for pleasure use a 14 turn motor tore through batteries too fast so I hung around the 17 turn range. Though gearing played a large roll too as a steeply geared truck with a stock motor would be faster around the front yard than a mod motor truck geared for a 50x100 track.
